Chocolate Coconut Super Seed Spread
Are you a peanut butter household, and sometimes find yourself stuck for an alternative that’s safe for school lunch boxes and nut free locations?
Or maybe just looking for a tasty snack that’s packed full of the healthy goodness of pumpkin, sunflower, chia, hemp, and flax seeds!
When making seed spreads (and nut spreads too!) I came to understand a reason why peanut butter is such a popular option. Its not just the taste – it’s the price as well. So I went on a mission to find a cost effective option.
Enter the Chocolate Coconut Super Seed Spread!
Or as it’s called in our home, Muma’s Special Spread!
Adding coconut enhances the flavour with a lower priced ingredent. When blended it responds like seeds and nuts by releasing oil. Making it an excellent addition to the seed spread!
Ingredients
1 cup pumpkin seeds
1/2 sunflower seeds
1 cup desiccated coconut
1/2 flaxseed meal
2 tbsp hemp seeds
1 tbsp chia seeds
1 tsp Himalayan Rock Salt
6 dried dates seedless
1 tbsp nutritional yeast
1/4 cup raw cacao
Optional extra
1 tbsp coconut sugar
***resist the urge to add honey, maple syrup, or any liquid sweetener. This will result in losing the butter texture and make it crumbly.
If you use a liquid sweetener, or if you’ve already made this mistake and are looking to fix it, add a liquid oil to the mix (not coconut oil). Start with a tbsp in the food processor and continue to add until you reach desired consistency
Instructions
First step is to roast the sunflower and pumpkin seeds. This is THE MOST IMPORTANT step in the process. If you’ve ever tried to make seed butter and found it took forever it is likely because you were using raw seeds.
Roast the seeds until fragrant. Be careful to watch them closely as they will burn quickly. Remove from oven and let cool.
While the pumpkin and sunflower seeds are cooking and cooling, place coconut, flaxseed, hemp, and chia to the food processor.
Add the sunflower and pumpkin seeds. Blend until oils release and continue to desired consistency. Add rock salt.
The butter can be complete here. Add salt to taste.
If you would like to next level your seed butter, add some or all of the following ingredients: dates, cacao, nutritional yeast.
Blend on high until desired consistency is reached.
Store in a glass jar.
Try to make it last more then a week 😉
